Pineapple shaped pineapple upside down cupcakes.
Made these for desert, although I have to admit I cheated. I didn't follow the direction on the package, I used a box cake. I know this would not qualify for real baking, but they still turned out good. And so Cute!
Recipe I followed:
1 box Duncan Hines Moist Deluxe Pineapple Supreme Cake Mix 18.25 oz
- mix according to direction.
1 can pineapple rings
1 jar mariachi cherries
2/3 cup brown sugar
1/2 cup melted butter
1/3 cup flour
Coconut Oil (recipe called for vegetable shortening)
Preheat Oven to 350 degrees F
Grease the pan with the coconut oil and dust with flower
Place 1 tbs melted butter in each cup
Divide brown sugar evenly in cups
Place 1 pineapple ring in each cup
Place 1 cherry in the center of each pineapple
Pour cake batter in each cup to about 2/3 full
Bake in oven for 23 to 25 minutes, until toothpick comes out clean.
We had extra batter so we also made some in a mini loaf pan.
I altered the recipe by cutting the pineapple rings in half
Place 1/2 pineapple ring in each mini loaf.

I love pineapple upside down cake! I have never thought about doing them as cupcakes. This would be so much easier for me to be able to eat them since I am the only one in my family that likes it.
