One reader commented on my post about Coconut Oil. She commented on her fudge recipe she makes with coconut oil. It sounded really good, so I decided to give it a try. I substituted pecans for the coconut flakes she used.
1 c Tropical Traditions coconut oil
1/2 c Hersheys cocoa
3/4 c Brown sugar
2 tbls Vanilla
pinch of sea salt
Pecans
The amounts are approximate because I added a little at a time.
Blend all ingredients in a mixer on high except the Pecans. Once it is fully mixed and fluffy, add in the pecans and blend on medium speed.
Spread evenly in a square pan and sprinkle additional pecans on top.
Place in refrigerator for at least an hour. Slice and enjoy.
In her post she commented that she used brown sugar or honey. I have seen other recipes that use grade B maple syrup. In the future I would use the honey or maple sugar. The brown sugar left a bit of a gritty texture. It is still good, very rich!
